Borsch is a beetroot-based superfood that is universally loved and available everywhere. This national dish is as delicious as it is healthy, and if you visit Ukraine, you must try at least one variant. Borsch is also popular in other former Soviet countries (Russia, Belarus, and Poland), but the original and best is in Ukraine.
Borsch tastes better if made from ugly vegetables (the lumpy unsightly ones that nobody in the supermarket chooses).
Borsch is often eaten with garlic and small, round bread rolls called ‘Pampushki.’
Ukrainians also make ‘Green Borsch, ‘ which is green, sour, and nowhere near as good as the original.
Although it looks like a soup and has all the features of a soup, Ukrainians do not consider Borsch to be a soup. It’s a Borsch.
